I always remember my maternal grandma. The souvenirs of people who have been here, have left a mark and then have just gone, are alive even though when time flies.

Sometimes I have a flash. I call flash an image which passes suddenly by my mind without being conscious of why I retain it in that specific moment. I don't either stop and think why but I suppose that every single idea, sentiment or thought that are seethed among our neurons, come out without being called.

Flashes related to my grandma are always welcome cause they´re a pleasant way of getting closer to her and don´t cry every time I miss her. This was particularly a culinary flash.

Just as the most of grandmas, mine was a great cooker. I could point out lots of dishes that only belong to her and that, if I close my eyes, I would be able to distinguish (but no imitate): her rice soup, her caneloni, her sweet fritters or her rolled dough with cream. They are those kind of recipes I will always try to learn approaching her in the kitchen and those kind of recipes I would love to find in dusty notes at her home.

Here you are, probably not as great as hers but beautiful enough to allow me to send her a sign up to the sky.

Dough / Masa:

- 300g of gluten-free all-purpose flour / 300g de harina sin gluten
- 125 ml olive or sunflower oil / 125 ml de aceite de oliva o girasol
- 125ml warm water / 125ml de agua templada
- 25ml white wine / 25ml de vino blanco
- 1 egg yolk / 1 yema de huevo

Cream pudding / crema pastelera:

- 500 ml milk / 500ml leche
- Lemon zest / Ralladura de limón
- 4 egg yolks / 4 yemas de huevo
- 200 g sugar / 200 g de azúcar
- 2 tablespoons corn starch / 2 cucharadas de almidón de maíz

- Sunflower to fry the rolled dough / Aceite de girasol para freír los canutillos
- Powder sugar to decorate / Azúcar glas para decorar
- Dark chocolate to decorate / Chocolate negro para decorar

Let´s do first the cream pudding as it has to cool in the fridge. In a saucepan, put the milk and lemon zest together and let them infuse at low temperature (not boiling).

Mix the egg yolks, sugar and corn starch in a bowl. Add half of the milk to this mixture and whisk it well. Then transfer it to the saucepan with the remaining milk and cook at low temperature until the mixture gets thick. Let it cool with a plastic film sticked to the surface so as not to allow it to set a thick layer. Bring it to the fridge for 2 hours.

To make the dough simply mix all the ingredients in a big bowl until making a ball and dough doesn´t stick to your fingers. Let it cool in the fridge for one hour.

Heat the oil in a frying pan. Stretch the dough and cover some cone moulds with it, fry them and then remove the mould trying not to break the cones of dough. Sprinkle them with powder sugar and let them cool. Fill them inside with the cream pudding and decorate with melted dark chocolate.

Magic happens with children

It´s been almost three years since I was dreaming about a day like today: sunday, no plans and baking with Léa...all the morning for the two of us: no stress, no worries about the mess in the kitchen and flour everywhere. For the first time... I  D-I-D-N-T  C-A-R-E and anticipating the images, I have to say that I was  H-A-P-P-Y.

It was much easier than I would have ever imagined. She was amazed, concentrated and SHE WAS LISTENING TO ME. That was the good part until I put the cacao on the table.

Estaba impresionada, concentrada y ME ESCUCHABA.

When we chose the eggs, I was impressed cause she was able to break the egg right into the bowl so no nightmares about `egg skating´ on the floor.

This is the first time I take photos of the `step by step´ but I think it´s really worth it to see her enthusiasm and perseverance cause, after 15 minutes, SHE WAS STILL ON THE CHAIR!

I was seriously worried about result but, as you can see, a picture is worth a thousand words...
MAGIC ALWAYS HAPPENS WITH CHILDREN.

2. Then add butter, milk and flours. Combine with hands or in an electric mixer till the dough doesn´t stick to your fingers.

3. Split the dough into two balls. Put one of them back to the bowl and add cocoa powder. Mix til combined. We should have two balls that will become four rolls: two chocolate rolls and two rolls without. Assemble the four of them alternating one white and one brown up and down. Wrap it and refrigerate for one hour.

4. Preheat the oven 180ºC and prepare a tray with parchment paper. Cut the roll into biscuits and put them on the tray. Bake for 15 minutes or until golden a bit. Let them cool on a rack. Preserve in a tin.

A good start of the year

It´s been a little while since I wrote my last post (last year) so first of all: Happy 2015! This time has been a needed break but also a lack of inspiration to come back and the wish to be here with any news about the future of this blog but, as the change hasn´t still arrived, I will keep on posting as always.

My motivation is as frozen as trees these days but clearness is yet to come. Since Christmas, weekends have been quite calm and I have been trying to relax mind and body and not thinking too much in obligations. Family is good help.

We have stayed a lot at home, feeling the coziness within our walls, laughing, cooking and tasting great recipes and enjoying time together probably much more than ever before. This is what I call... a good start of the year.

Apple-cider doughnuts

- 200 g vanilla butter (or normal unsalted butter) melted
- 20 g vanilla extract

Whisk the flour, corn starch, xanthan gum, yeast and salt in a stand mixer.
Then add the apple cider, eggs, honey, butter and vanilla to the dry ingredients and mix them with the paddle attachment during 5 minutes.
Cover and allow to rest at room temperature approximately 2 hours. Then refrigerated in a container during the night.
The morning after, fill the saucepan with sunflower oil and heat it. While oil is heating, dust the surface of the dough with rice flour and flatten it into a rectangle. Using a doughnut cutter, cut the dough into rounds and drop them into the hot oil.
After 2 minutes, flip them over and deep fry for another minute or until golden brown. Remove from oil and transfer to paper towels. Then dust with confectioners´sugar.
They are ready to eat... warm and tender.

Doughnuts con sidra de manzana

- 640 g de almidón de maíz
- 10 g de levadura en polvo
- 2 cucharaditas de goma xantana
- 25 g de sal
- 500 g de sidra templada
- 3 huevos

Christmas time

I have always been a Christmas person and I didn't understand why there were people who disliked a time of the year in which families meet around the table to celebrate that they are together; think about a present for someone; write some special words to each other; bring joy and hope for children; and keep family memories alive.

Today I don´t feel the same way, but don´t get me wrong, I am not saying I hate Christmas... it is more a question of missing some of those people around the table so now I can finally understand who does not enjoy Christmas as it is. But I don´t want to bore you with sentimental thoughts, it was only a reflection to put into words how I feel these days. In future years, maybe I will change my mind cause I´ll be enjoying with Léa her particular Christmas world.

And now, let´s say that we have already started celebrating these past weeks with friends taking advantage of the arrival of  St. Nicolas in Belgium. We have been cooking, styling our table, wrapping gifts, buying and decorating our Christmas tree and filling home with lots of lights and scents of candles to get into the mood.

As we are leaving to Asturias in a few days, I wanted to share with you these images to wish you:

FELIZ NAVIDAD Y FELIZ 2015

comfort food and pyjamas

Sundays are the best days for doing nothing. Today, morning was foggy and cold so we decided just to relax doing things we love at home: think about what we want to eat, cook it, eat it and lay down in the sofa for the rest of the day. Let´s say it is not the best for digestion but it works when we are tired enough so as not to make other plans.

We are fans of simply comfort food but we like to dress it to look good and appealing, even if we don´t have guests and this is only for the three of us.

Next week we celebrate St. Nicholas in Belgium, the old white beard bishop dressed in red who brings presents for children the night of 5th to 6th december, so we are ready to bake biscuits and prepare home for Christmas.

P.D. Sorry, today I didn´t translate the post into english.

an after-lunch table

Every sunday i wish it would be friday, something that probably every single person in the world would wish too.

This is the reason...

Esta es la razón...

Small gatherings at home, friends who come and visit, babies around, glasses of wine, a hot main course and coffee with dessert... and table talk.

It´s time to eat apples more than ever. This year i can´t go to my grandfathers´s apple field either. No apple is as tasty as his but, once again, i get along with.

This tart is my every year admiration signal to him because autumn for me means... collecting apples in Asturias.

Sundays are sundays

I could stay right here forever watching seasons passing by...

I love october because of this kind of little nostalgia about sun but looking forward the rain and ochres range instead.

Sundays are sundays, days full of home, cooking and looking at the window with some delicious biscuits (these, Léa´s favorite). Today I couldn´t ask for more.
